DESCRIPTION AND TYPE:
From grapes harvested in plateaux between the second and third week of September and with short drying of 15 - 20 days.
VINIFICATION:
The grapes are de-stemmed and placed to macerate with the skins in a press-brake with presence of enzyme for a few hours. The must is separated and then statically decanted with the help of cold.
AGING:
Refiniment: for 10 months before bottling
APPEARANCE:
At sight it is golden-green.
BOUQUET:
With the scent of white flowers (acacia), honey and flint.
PALATE:
To the taste we find an excellent freshness given by sapidity and complex fruitiness reminiscent of the apricot, the very ripe golden apple, to switch to perennial herbs such as mint and eucalyptus, all wrapped in sweet rolls of barriques and great minerality . Dense, round and intense, with a clear and persistent finish. A wine of rare elegance.
SERVING TEMPERATURE
10 - 12° C.
