THE VINEYARD:

DESCRIPTION AND TYPE:

On the hills of Negrar, Illasi and Tregnago (Verona), on mainly calcareous and clayey soil, the typical vines of this production are born: Rondinella Bianca 60%, Gold Traminer 15%, Kerner 15%, Incrocio Manzoni 10%.

The operations on these types of vineyards include organic fertilizers and manual pruning, selection of shoots, defoliation and thinning of the bunches. The harvest takes place between the 2nd and 3rd week of September.

PRODUCTION:

VINIFICATION:

De-stemming and pressing, several hours of cryomaceration on the skins, gravity settling at 7/8°C, controlled fermentation in concrete vats for ca. 20 days.

AGING:

Sur lie maturation for a minimum of 6 months, with weekly bâtonnage

SENSOR PROFILE:

APPEARANCE:

At the sight it is purple red tending to intense violet, with garnet reflections to aging.

BOUQUET:

The great aromatic, crunchy, mineral fragrance, immediate fruity scents, the reds of sottososum: blueberry, blackcurrants, wild blackberries. With aging it remembers graphs you and earth.

PALATE:

Seductive, rich, complex, tangy, minerally, very lengthy.

CONSUMPTION:

SERVING TEMPERATURE

10 - 12° C.

PAIRING:

It goes well with fatty fish, mixed boiled meats, grilled meats, roasts and medium-aged cheeses.

Abbinamenti Excellent as an aperitif wine, it is delicious as well with shellfi sh, fi sh, risott o and asparagus, chard, and soups.
