THE VINEYARD:

DESCRIPTION AND TYPE:

Type of wine: Dry D.O.C. red.
Grape varieties: 50% Corvina, 20% Corvinone, 20% Rondinella, 10% Sangiovese.
Production zone: San Pietro in Cariano and Pedemonte di Valpolicella.
Type of soil: Of alluvial origin; clayey, with moderate limestone content and lots of rocks.
Training system: Trentino-type pergola with, on average, 30 year-old vines.
Yield: 10,000 kg/ha.

PRODUCTION:

VINIFICATION:

The grapes are harvested by hand at the beginning of October. Traditional red wine vinification lasts 8-10 days, with the must remaining in contact with the skins and pumping over being carried out on a daily basis in order to extract color.

AGING:

Storage takes place in stainless steel tanks and the wine is bottled during the month of March.

APPEARANCE:

A Youthful wine, with a ruby red color with brilliant purplish highlights and a pinkish rim.

BOUQUET:

The smell is fresh and fruity with cherry aromas.

PALATE:

It is fresh, lively and moderately tangy on the palate, with restrained alcohol and soft overlying fruit. Its tannins seem initially faintly astringent, but become velvety with time in the glass.

With its appealing characteristics of fruitiness and freshness, it can be matched throughout a meal with dishes that are flavorful but not too elaborate: pasta, white meats and light foods in general.
