DESCRIPTION AND TYPE:
Valpolicella Classico is a very important wine for the inhabitants of Valpolicella, because it was consumed as soon as it was produced and drank young.
Grapes: Corvina 40%, corvinone 30%, rondinella 20%, molinara 10%.
Grape pressing in the middle of October. Fermentation temperature 25-27°C which lasts about 10-12 days. Ageing four months in steel barrels.
Refiniment: for 2 months before bottling.
Ruby red wine.
The nose is quite intense, complex with characteristic aromas of cherry, morello cherry, fresh almonds, fresh red young flowers and the vinous scent that characterizes the vintage Valpolicella.
In the mouth it is soft with a nice young tannin and with a good flavor, medium bodied wine.
Ideal with hors d'oeuvre and main courses like pasta, rice and meat.
