The Valpolicella Ripasso Classico Superiore Le Bignele is a red DOC wine from the Veneto region produced exclusively in the classic Valpolicella. The vines are used such as Corvina, Corvinone, Rondinella.
The wine is made to pass over the skins withered Amarone just tapped, still soaked in wine, making it start a second fermentation, increasing its alcohol content: Le Bignele Ripasso, with this process, is enriched with color, extracts and aromas, thus improving its longevity.
Refinement: for 1-2 years before bottling.
Dry garnet-red wine.
With a strong bouquet with hints of red fruits and black cherries.
Rich and velvet-smooth flavour.
18 - 20°C.
This is a full-bodied and structured wine; for this reason it is a fine companion for game dishes, roasts, and grilled or braised meats.
