DESCRIPTION AND TYPE:
On the hills of Negrar, Illasi and Tregnago (Verona), on mainly calcareous and clayey soil, the typical vines of this production are born: Rondinella Bianca 60%, Gold Traminer 15%, Kerner 15%, Incrocio Manzoni 10%.
Operations on the vineyard include organic fertilizers and manual pruning, selection of shoots, defoliation and thinning of the bunches.
Fermentation of the fresh grapes in September-October at natural temperatures, with a second fermentation, about 14 days.
In January on the skins of Amarone in accord with the classic Ripasso tradition. At least 3 years maturation in large Slavonian oak ovals, followed by 6 months in the bottle.
Medium ruby red, tending towards garnet with ageing.
Notes of ripe cherry, morello cherry, and semi-dried plum.
Smooth and seductive, with an appealing sapidity and impressions of ripe fruit and spice.
Accompanies cold cuts, medium-aged cheeses, soups, and lighter meats.
