DESCRIPTION AND TYPE:

Amarone Classico della Valpolicella Boscaini is a dry passito red wine produced exclusively in Valpolicella.

The vines are used such as Corvina 40%, Corvinone 40% Rondinella 10% + (Dindarella, Croatina, Pelara).

PRODUCTION:

VINIFICATION:

Fermentation 50 days with three daily pumpovers and two delestages. Use of the exclusive cascade system for breaking the pomace cap. Aging time in cask: 18 months.

AGING:

Refiniment: for 3 months before bottling.

APPEARANCE:

At the sight it has a garnet red color.

BOUQUET:

The nose has an intense scent of dried rose with blueberries of the forest, with cherries under the breath.

PALATE:

The taste is a sweet and delicate.

CONSUMPTION:

20°C.

PAIRING:

It goes well with dishes of commitment, such as roast meat, game, aged cheeses, braised. It should be served at room temperature, preferably placed in carafe and decanted a few hours before.
