This wine’s somewhat forbidding name describes the efforts and endeavor required to reach this steep and almost inaccessible vineyard, as well as the tenaciousness and determination necessary to tame and cultivate it.

DESCRIPTION AND TYPE:
Type of wine: Dry D.O.C. red, produced only in the finest vintages.
Grape varieties: 70% Corvina Veronese, 25% Rondinella, 5% Corvinone.
Production zone: This special selection takes its name from the vineyard of the same name at San Pietro in Cariano.
Type of soil: Red clay and limestone, of glacial origin.
Training system: Guyot with, on average, 35 year-old vines
Yield: 4,000 kg/ha.
This special reserve wine is produced only in the best vintages, and in very limited quantities. Just the healthiest grapes from the “Campo Inferi” vineyard are first of all selected and picked by hand at the beginning of October. They are then laid out in shallow crates and placed in the drying lofts under controlled conditions of temperature and humidity for 4 months. After further strict selection, the bunches are pressed in January, having lost around 40% of their initial weight. Fermentation, which takes place very slowly because of the low ambient temperatures, lasts around 30 days.AGING:
The wine thus obtained then begins its process of maturation in 18 hl oak casks for 24 months. At the end of this period the Amarone Classico “Campo Inferi” is bottled and left to rest for 6 months prior to being released onto the market.
It reveals a deep ruby color with a faintly amber rim.
In its sophisticated and elegantly refined bouquet one finds notes of sweet cacao and roasted coffee beans.
Its flavor is warm and mouth-filling, and evokes melted chocolate and cherries preserved in brandy: it is full-bodied and velvety. The aftertaste is satisfying, sumptuous and persistent.
Enjoy it on its own or as an ideal accompaniment for main courses of grilled, braised or stewed red meats. It is also delicious with game, guinea fowl with truffles, or with mature cheeses.
