The Antolini winery farms 9 hectares vineyards scattered within Marano di Valpolicella, San Pietro in Cariano (Semonte locality), and Negrar (Cà Coato locality). Since1992, Stefano and his brother Pier Paolo have been growing vines 150 and 350 metres above sea level. They work respecting the environment, using suitable pesticides. Their land, basically clayey, holds water and is characterised by remarkable thermal excursion.
The ideal setting for producing scented, olfactively complex, wines. Bearing in mind tradition, they are immune to fads, constantly pursuing specificity combined with quality. “Growing vines is no ordinary job, vines need to be bred individually, just like creatures".
Among the wines proposed by Antolini, we find Valpolicella Classico 2014, Valpolicella Ripasso Superiore 2014, Amarone Classico Moròpio 2012, Amarone Cà Coato (2011 and 2012), and Recioto di Valpolicella Classico 2015. The breeding method is per area, double pergola, with medium 1×4 planting density. Many rows are planted on "marogne", typical dry-stone walls.
The wine cellar was completed in 2001. The first floor is devoted to the room where grapes are dried, the ground floor includes the warehouse and the bottling area, while outside we find cutting-edge winemaking machines for the fermentation. The basement holds the steel tanks and, beneath it, lies the ageing cellar, with barrels and barriques.
It is an open wine cellar, which also features two tasting rooms, perfect for parties of maximum 25 guests.
